Cocoa Liquor Testing

The Flavour Quality Laboratory (FQL) of the Institute organised liquor testing session on July 19, 2022. The samples from West African Cocoa (Côte d’Ivoire) and Madagascar were used alongside two reference samples. The aim was to determine the flavour quality of different chocolate bars from different sources. The panellists involved in the exercise were scientists from the Institute.
